Bio:  Beth V. George is a lawyer and business owner/entrepreneur who founded Spelt Right Baking in 2007 with her husband Timothy Kane. Beth is a 1985 graduate of Bates College, Lewiston, Maine and received her law degree in 1992 from Franklin Pierce Law Center in Concord, NH. As a lawyer, she worked in a range of fields, first as a law clerk to the Chief Justice of the New Hampshire Supreme Court and later in varied practices spanning from products liability and business defense to representing children in crisis. Beth’s work as a children’s advocate attorney together with a health crisis with her own son lead her to develop Spelt Right, an all natural baking company that promotes the importance of good nutrition. Beth is licensed to practice law in the State of Maine and is a frequent speaker on the issues of diet and behavior, entrepreneurship, and parent empowerment.

Company Description:  Spelt Right Baking of Yarmouth, Maine was founded in 2007. Spelt Right’s product line is expanding, but currently includes bagels, pizza dough and breads, which are all natural, award winning, Kosher certified, vegan, allergy friendly (no common wheat, no nuts, no soy, no corn, no dairy, no eggs), and made in a facility powered by water.

Beth George and Tim Kane founded Spelt Right Baking in 2007 as a result of their young son’s intolerance to common wheat and many artificial additives in foods. In a nutshell, his inability to digest common wheat and certain food additives caused behaviors that mimicked those that are associated with autism spectrum disorders and ADHD. Once the offending foods and additives were removed, his behavior improved to such a marked degree that he is now in the gifted program in school, carries no diagnoses, and is not on any medications. Having seen this incredible change, Beth was inspired to start baking in spelt and also to start sharing their story to help other parents. Unable to find “kid friendly” spelt products in the market place, Beth and Tim decided to create their own line of spelt baked goods. Within a few years, Spelt Right’s distribution has grown from just a handful of venues in Portland, Maine to stores throughout New England and eastern New York, including Whole Foods Markets (CT, RI, Mass, Maine), Hannaford Supermarkets (Maine, NH, Mass, VT, NY), independent health and specialty food stores, cafes and restaurants, select colleges and hospitals.
